• Persimmon with goat and sheep's milk cheese, flavored with smoked Circassian pear
• Sea scallop with porcini mushrooms and Siberian walnut praline
• Duck pâté with beetroot marmalade, northern cloudberry cream, and champagne jelly
• Crab dumplings with caviar sauce and truffles
• Quail stuffed with foie gras, with amaranth and wild mushroom porridge in a red wine sauce
• Airy condensed milk ice cream, served with oven-baked persimmon
